Rice Trio Salad

250g Good Earth Rice Trio
A pinch of Marigold vegetable bouillon powder
500g plum tomatoes, deseeded and finely chopped
200g feta, cubed
4 spring onions, finely chopped
Large handful parsley roughly chopped
Large handful mint roughly chopped
Juice of half a lemon
5 tbsp Pantaleo 100% Fruttato Extra Virgin Olive Oil
Place the rice mix and a pinch of bouillon powder in a pan and cover with 500ml water. Bring to the boil, cover and leave to simmer gently for 30-40 minutes until all the water has been absorbed. Meanwhile deseed and finely chop the tomatoes and place in a bowl, add the diced feta and clean and finely chop the spring onions. Mix all together with a fork and pour in the lemon juice and olive oil.
When you are ready to seve, fluff the fork through the rice and mix into the vegetables and sprinkly over the chopped parsley and mint. Serve warm or cold.
